Opening a business — especially one built around passion — is both thrilling and overwhelming. There are forms to file, menus to test, shelves to stock, and about a hundred things we haven’t even thought of yet. But we’re building this café in the open, because we believe the people who show up to share the space deserve to see how it’s made.
